Mince Stuffed Tomatoes or Green Peppers

3 tablespoons oil

5 ounces finely chopped onions

¾ teaspoon garlic paste

¾ teaspoon ginger paste

¼ teaspoon salt

½ teaspoon turmeric powder

¼ pound mince (lamb or beef)

¼ teaspoon garam masala

1 teaspoon coriander powder

¼ teaspoon red chilli powder

1 finely sliced green chilli minus the seeds

2 large skinned and chopped tomatoes

6 medium tomatoes or 6 small green peppers

1 tablespoon coriander leaves

Place oil in a saucepan and add onions. Fry until onions are golden brown. Add garlic, ginger, salt, turmeric powder and mince. Stir and add garam masala, coriander powder, red chilli powder and green chilli. Stir-fry until the mince absorbs the moisture. Add a little water and cook until the mince is tender.

Trim the peppers or tomatoes. Cut across the top about ¼ inch thick. Scoop out the seeds and stuff the vegetable with half the mince. Place the lips back on. Add chopped tomatoes to the remainder of the mince and cook until they are soft. Place the stuffed tomatoes or peppers in a wide ovenproof dish, carefully pour the remainder of the mince curry over the vegetables and cook, covered, in a hot oven (200 degrees Celsius, middle shelf) for about 30 to 35 minutes. Sprinkle some chopped coriander leaves on top and serve.
